Avarakkai poriyal / broad beans stir fry is not only tasty but also healthy and very rich in fiber.
Cleaning and prep work for broad beans stir fry can take a while but the recipe is simple and cooking hardly requires 5 minutes.
The two ends of the beans is cut and they are removed along with the fibrous edges on both the sides of the beans.
Wash, clean and chop beans.
Chop onions and green chillies.
Wash curry leaves and cilantro.
Half teaspoon each – Mustard seeds and cumin seeds.
Heat oil in a pan and when the mustard seeds have stopped spluttering, add onions, green chillies followed by chopped beans.
Stir fry for a few minutes and switch off stove when the beans is done. This goes very well with sambar.
