Banana Stem Dal Gravy ( Vazhai Thandu Paruppu Kootu ) is very rich in fiber and useful for weight loss.
This has to be cleaned a particular way to remove the excess fiber or it will be difficult to eat it. So lets first see how to clean and cut banana stem.

Remove the outer most layer
Make a thin slice and you will be able to see the fiber like shown below.
Using finger or fork, start twirling and pulling the fiber out.
Repeat this step for every slice.
Chop the slices into small pieces. The pieces will get discolored and turn dirty brown in color if exposed to atmosphere. So have a bowl of diluted buttermilk ready and drop the pieces into bowl as soon as they are cut.
Cook and mash dal (moon dal or toor dal). You can cook it with garlic and tomatoes.
How to make vazhai thandu poriyal
Heat oil and temper with mustard seeds and red chilies. Fry curry leaves and onions and green chilies.
Add turmeric powder and cumin seed powder.
Scoop out the banana stem pieces from the buttermilk and add and stir fry for a few minutes.
Add some of the butter milk if necessary.
Vazhai thandu poriyal (fry) is ready. This can be had as a side dish for rice. Next lets make Vazhai thandu kootu (curry) with dal.
