This is a very quick and easy to make but very healthy side dish for rice. When consumed regularly, bitter gourd regulates blood sugar.
Ripe tomatoes – 3
Cut bitter gourd
Heat oil in a pan. Add mustard seeds and wait for them to splutter. Then add cumin seeds followed by urad dal. When urad dal is fried and has turned golden brown, add cut bitter gourd and stir fry for a minute. Then cut tomatoes into half and squeeze the juice into the pan before adding it. Allow the bitter gourd to cook in this juice. We add tomatoes or sometimes even tamarind to bitter gourd because the sourness masks the bitter taste.
Cover and cook till the vegetables are half cooked and have become soft. Then add salt, turmeric powder and chili powder and stir fry on high heat for 3 – 5 minutes with constant stirring. This will remove all moisture / sogginess and make the pieces crispy.
Enjoy with rice and sambar.
