Coconut rice is a quick and easy to make rice dish. It is not spicy and even fussy kids would love to eat it.
This is a perfect dish if you are feeling lazy to cook . All you have to do is season shredded coconuts and voila in 5 minutes, you have tasty flavorful coconut rice. Yum!
Shredded coconut – 1 cup
Curry leaves, Coriander (cilantro) leaves
Channa dal (chickpeas) – Soak channa dal in hot water for 10 minutes to soften it.
Whole red chilli – 1 or 2
Cashew nuts – Optional
Heat a teaspoon of ghee and fry cashew nuts and set them aside (this step is optional)
Heat oil or ghee and add mustard seeds.
When it stops spluttering, add cumin seeds followed by whole red chillies followed by urad dal.
Stir fry for a minute or two and then add curry leaves and cilantro.
Add the soaked channa dal and stir fry till it is cooked and soft yet crunchy. It should not be raw or mushy. Sprinkle little water if channa dal (chickpeas) takes longer to cook. And then add the cashew nuts.
Switch off the stove and remove the vessel from the burner and then add shredded coconut. The coconut should not be cooked under high heat. The heat in the vessel is just enough to fry it to remove excess moisture and make it crispy.
Remove the fried mixture from stove and mix with hot rice. You may add ghee to the rice and then mix the two together. But it increases the number of calories so it is more suitable for kids.
Garnish with coriander leaves and your kid will be happy to east it without any fuss. This is my go to dish when I am sick and I am not in a mood to cook elaborate meals or eat out.
