Idiappam or Noolputtu is a breakfast dish and can be served with this Kerala style egg curry or potato stew or chicken curry. It is made from rice flour. Since it is a steamed dish it is a healthy option. And yes my children love it. They would love to have it any time of the day.
You can serve this dish hot or cold. So its a good option to send to school also. And the best part is that you do not have to be prepared before hand. For idli or dosa or appam you need the batter ready earlier. Some mornings we are actually left with nothing ready. I will show you a step by step recipe to make this dish.
Boil some water in a vessel.
Take rice flour in a wide vessel so that you can make the batter easily.
Now add salt to this. Then add the hot water to this little by little. Do not add too much water. We need to get the chapati dough consistency slowly. Initially use a spoon to mix the flour with water. Later when it starts getting thicker then knead it to make a smooth dough.
Here is a picture of the final dough. You can add a spoon of oil to get the smooth dough. Allow this to rest for 10 minutes.
Now we need to use the sev maker. We need to use the net with the small holes. I have used medium hole net as my kids do not like it very thin.
In the mean time, heat some water in steamer or in cooker. You can make this in steamer or in idli maker. I will show you pics of both. While the water gets heated, grease the vessel you are going to cook the idiappam in. Spread out some grated coconut on it. This is the idli vessel after greasing with oil and spreading coconut.
And this is the steamer vessel with coconut spread on it.
Now squeeze out the idiappam on top of this grated coconut.
Layer up all the vessels and place into the cooker or steamer for cooking.
This cooking will take at least 15 to 20 minutes. Initially keep it on high flame. Then reduce flame and cook. Altogether it will be done in 20 minutes max. If making in cooker, then do not keep the weight.
Once it is done remove from the vessel and allow to cool for a minute. Then transfer to serving plate by turning it upside down. So the coconut will come on top.
