Mint and Coconut Chutney ( புதினா தேங்காய் சட்னி ) is a refreshing spread for roti. It can also be consumed with rice.
Wash mint thoroughly and separate the leaves from the stalk.
Shred coconut. Coconut pieces can be used too.
This is an oil less recipe. Heat a pan and stir fry the mint leaves.
Add coconut and stir fry in low heat.
Add red chillies.
Grind into a paste.
Mint chutney is ready.
