I cook this mixed vegetables kurma when I have small amounts of various vegetables in the fridge. It is tasty, healthy and very easy to make.
Wash and chop cilantro (coriander leaves)
Wash curry leaves
Peel, wash and chop ginger and garlic
Chop onions, tomatoes, potatoes, beans, carrots and cauliflower. You can use any vegetable that you want for this recipe. When cooking, remember to add the vegetable that takes the longest to cook first. For a small family, 3/4th of a cup of each vegetable is enough.
Fry fennel seeds.
Add ginger and garlic.
Add curry leaves and chillies.
Add potatoes then beans.
You can fry cumin seeds along with the fennel seeds (first step) or you can add cumin seed powder now.
I keep a small bottle of cumin seeds powder mixed with garam masala handy. Garam masala is optional. I am adding this mix now.
Add turmeric powder.
The vegetables are partly cooked by now. Add water and bring everything to a boil.
When the vegetables are cooked, add coconut milk or coconut paste.
Simmer for a few minutes and kurma is ready.
This goes well with Indian tiffin items.
