Potato Fry / Urulai Kilangu Varuval goes well with curd rice and tomato rice.
Cut potatoes and soak them in salt water for 5 minutes. Shallow fry potato pieces in oil.
In a pan, heat oil and season with mustard seeds, cumin seeds, curry leaves, finely chopped ginger and garlic. Add the above one by one.
Then add onions and stir fry for few minutes and when it is done, add tomatoes
Add salt, turmeric powder followed by chili powder.
Stir fry till all the powders are cooked and there is no raw smell. Then add the potatoes.
Stir fry for a couple of minutes till the potatoes are fully cooked and coated with masala.
