Potato Fry – Urulaikilangu Varuval

Any south Indian would swear that potato fry (urulaikilangu varuval) along with curd rice or rasam rice is the best comfort food in this world. 🙂

It is a simple stir fry and can be made easily by anyone.

You can peel potatoes if you want. Leaving the skin on, makes it slightly more crispier and tastier.

For seasoning, we need the usual items – mustard seeds, cumin seeds, urad dal, turmeric, salt and chili powder.

This cooks well in an iron kadai (irumbu chatti). Heat a little oil and season with the spices adding them one by one starting with mustard, then cumin seeds and then with urad dal.

We don’t add onions for this as onions will make it soggy. You can add finely chopped onions if you want. Then add the thinly sliced pieces of potatoes and stir fry.

Add the powders.

Keep stirring till the potato is well cooked.

Garnish with coriander leaves and serve with hot rice and tomato rasam.
