I am yet to meet an Indian who does not drool over Poori / puri and potato masala.
So I am going jump right into the recipe now. 🙂
Onions, tomatoes, ginger, garlic and green chillies chopped.
Potatoes – cooked, peeled and mashed.
Curry leaves and cilantro – washed.
Mustard seeds and turmeric powder – 1 teaspoon each.
Dry roast cumin seeds for a few seconds.
And grind it in a blender or coffee grinder.
Add mustard seeds to hot oil and when it has stopped spluttering, add chopped and slightly crushed ginger and garlic pieces.
Fry them for a couple of minutes and then add curry leaves followed by green chillies.
When they are partially cooked, add the chopped onions.
Stir fry onions for a few minutes and then add cut tomatoes.
Add cumin seed powder
Add turmeric powder
Then add mashed potatoes.
Stir fry till the masala coats the potatoes. Add water and bring everything to a boil.
Garnish with cilantro.
Poori dough is rolled.
