Ridged gourd peel thogayal ( பீர்க்கங்காய் தோல் தொகையல்) is fiber rich chutney made with the peel of ridge gourd / ridged gourd. We usually use ridge gourd for dal curries and ridge gourd masala but discard the peel which is high in fiber.
Wash and peel the ridge gourd. Chop the peel if necessary so it will fit into your blender jar.
Pinch of asafoetida powder
Heat oil and temper with mustard seeds.
Add urad dal and fry for a few minutes.
Add asafoetida powder and red chillies.
Add ridge gourd peel and fry.
Grind in a blender with salt.
Enjoy with rice, roti, dosa or idli.
