Tomato Rice ( Thakkali Sadham ) is usually a lunch box item.
It goes very well with onion raita and potato fry.
Wash and chop onions, green chilies, tomatoes, cilantro, ginger and garlic pieces.
Wash curry leaves.
Heat oil in a pan, season with mustard seeds. Add ginger and garlic pieces followed by curry leaves. Then add chopped onions and green chillies.
You can simply add chopped tomatoes. To quicken the process, I blended them for a few seconds. Add tomatoes and stir fry till they are cooked.
Add salt, chilli powder, turmeric powder and half teaspoon garam masala powder (optional). Continue to stir fry till the moisture evaporates and the paste is thicker.
Mix with cooked rice and garnish with cilantro.
